My family have a definite weakness for rissoles. They are super quick and easy to make. When I was growing up, we always had Rissoles ones a week. I have made many different kinds over the years and never have been disappointed at the end results.  Give them a try before you know it you will be creating your own family favorites.

  1. Using half of the onion chop it up as finely as you can and place it in a bowl along with one grated carrot, egg, finely diced spinach and 1/2 tsp garlic, 2 tsp Mc Cormick Roasted Garlic & Herb, salt and 1/2 tsp of smoked paprika. Whisk all of this together well. Add in your ground Turkey Breast and combine everything thing through real well.
  2. Add in your panko bread crumbs and using your hands mix through real well and form 8 equal balls. These balls don't have to be perfect yet just getting them ready for the cheese stuffing.
  3. I work with slightly wet hands or i lightly spray cooking spray on my hands to help when i roll the rissoles, this stops the turkey sticking to my hands. With each ball press a ball of cheese into the middle of each rissole and then close up around the cheese, making sure its all sealed up, then set aside on a tray and continue with the rest.
  4. Spray your non stick skillet or pan with cooking spray and cook each rissole on each side for about 2-3 minutes on medium high heat we just want to give them a nice seared crust on each side. Place them on a plate and cover and keep warm.
  5. In a bullet or blender blend together 1 can of tomato paste, 1/2 jar of peppers with liquid and 1/3 cup of stock. Blend till nice and smooth.
  6. In the same skillet give it a spray with some more cooking spray and use the other half chopped onion and saute for about 3-4 minutes and then add in your half a jar of peppers that have been chopped up nice and finely. Add in all your spices and season well with some salt and pepper to your liking.
  7. Pour your blended sauce in and stir well till all combined - ( of course you can add mushrooms zucchinis anything you like to this sauce at any time) Bring to a slight boil.
  8. Place your rissoles back in and cover them with sauce and let them simmer in the sauce for 10 minutes covered then turn once and simmer again for about 5 minutes or until cooked then stir in your sour cream and enjoy.
  9. This meal can be eaten with a side of garlic mash and vegetables or over pasta or rice, on a sub sandwich and veggie zoodles, what ever way you choose just create and enjoy it how you like it. I have made rissoles with all kinds of meats and all kinds of sauces, create and enjoy =)
  10. NOTES- Belgioioso Mozzarella Snacking Cheese, found in Jewel Walmart here in the states. weighs 1 oz 2 smart points. The 1 oz has 3 little balls perfect size for the stuffing. Of course if you can not find this use a cheese stick cutting it into small portions.
