Today’s recipe is all about comfort… Crescent rolls and chicken stuffed with bacon, spinach, and cheddar cheese, then baked golden brown. Absolutely delicious. This recipe was a huge hit and one that will be made again, the whole family loved it.
Preheat oven to 350 F and ready a baking sheet with foil lightly sprayed with cooking oil.
Lightly spray a non stick cooking skillet and saute your onions for about 3 minutes then add i your spinach and bacon bits season with salt and pepper and some garlic powder, then set aside to cool. We just want the spinach to wilt down a little.
With your shredded cheese just chop your knife through it roughly to make it a finer cut and place into a bowl once the spinach mixture has cooled enough add it to the cheese and give it a good mix.
Now before i open my chicken fillet packets up i like to give them a small pounding with my rolling pin so they are nice and even surface and slightly thinner, doing it in the sealed plastic helps keep the mess in control =)
Unroll your tube of crescent rolls and after separating them give each one a slight roll out with your rolling pin giving it a slight stretch to help wrap around the chicken.
This is going to be a messy job so have a towel near by lol. Lay a piece of chicken on top of the crescent roll then add your filling then very gently but firmly begin to roll up sealing as much as you can as you go. Its okay if not all gets sealed up. These aren't meant to look perfect but they will taste awesome. Lay them on the pre sprayed cooking sheet. Continue with the rest wiping your hands and work space as you go along will help.
Give them a quick spray and with any left over marinade from the chicken just dab a little onto the chicken with a basting brush adding flavor to the crescent. I set them back into the freezer for 10 minutes before i bake them, that's optional.
Bake in the oven for 15 minutes turn them around for even cooking and continue for a further 8 - 10 minutes till cooked.
