Creamy Turkey Alfredo Stuffed Peppers. Turkey, Bacon and Asparagus Alfredo is mixed with rice and cheese, stuffed into bell peppers and baked to delicious gooey perfection! Easy to prepare for a weekday dinner yet fancy enough for that special meal.
Meanwhile, prepare peppers by slicing in half and cleaning out ribs and seeds. spray lightly with cooking spray and season well with salt and pepper. Place on baking sheet and roast for about 10-15 minutes. These will be very hot let cool for a few min before stuffing.
Firstly chop up your veggies nice and fine. Place all the ingredients into a large bowl and season well, add in your Alfredo sauce and chicken stock and mix through thoroughly.
Begin to stuff your peppers real well. I pack them firmly with a nice high mound use up all your stuffing.As you will notice i only used 3 bell peppers because my daughter prefers the zucchinis, they are made the same way =)
Place them on a lined baking tray and bake for 30 - 35 min depending on your oven.
Once cooked let them cool as they are very hot and then enjoy them with a nice side salad of your choice.
