Instructions
  1. Slice and dice your vegetables, i bought frozen okra. Traditionally the broth should be thicker and that's why you can add in the cornstarch but i enjoy it just the way it is over my rice.
  2. Place all the chopped vegetables into the slow cooker along with the sliced sausage, add in your seasonings. Mix in your tomatoes and stock and stir gently to combine all the ingredients.
  3. Nestle the chicken breast within the slow cooker and the bay leaves, close the lid and let it cook on high for 4 hours.
  4. In the last 300 minutes of the cooking , remove the chicken breast and shred them before placing back in make sure you remove the bay leaves. Adjust your seasoning if you need more salt or pepper. Mix your thickener and place into the slow cooker and continue to cook on high.
  5. 5 Minutes before serving add in your raw shrimp and stir through and leave untill cooked.
  6. You can serve this over cooked white / brown rice just before serving. Enjoy.
