Slow cookers are always great, they have become a helping hand in our kitchens. I love to cook but sometimes i just don’t always have the time to give it my all. Cooking fast simple meals is a real must sometimes. My kids love Chicken Fajitas any time year. I can not go wrong with serving this dinner. So when they say ” hey mu I have a few friend coming over whats for dinner?” I know i can rely on my slow cooker Chicken Fajitas to come to a rescue. Smiling faces all round, healthier choice for me and my old friend the crock pot saved the day!
If your chicken breast are chunky thick i would halve them- the chunky thick breast are best for this recipe they will remain juicy. Prep your veggies and mix all your spices together. The lime and honey is for the very end of the meal so you can set that aside for later.
Place half of the onions, garlic and peppers on the bottom of the slow cooker and spread over half of the salsa. Season over some of the seasoning.
Season both sides of your chicken with the seasoning making sure you leave enough seasoning to season the other half of the veggies. Place the chicken in the slow cooker. Then top with the rest of the garlic, onions and peppers season and top with salsa. I give it a bit of a jiggle around to mix things up and set it on high for about 3 hours but check it after about 2 1/2.
After 2 1/2 hours you will want to slice the chicken into strips and place back in mix in your honey and squeeze all the lime in give a gentle good stir. This should be already cooked but if not keep in for the last 30 minutes. I closed the lid on mine and let sit for 15 minutes after i sliced to take in all the juices once sliced. Use a slotted spoon and Serve warm. ( I used the left over stock stock in this to make chicken bean soup)
Now these can be eaten with your favorite types of tortillas , sour cream and guacamole. Do a healthy lettuce wrap or enjoy it with some Mexican rice or even veggie zoodles. Enjoy =)
NOTES- Add less or more chili powder this was spicy enough for me. if you can not get salsa used canned diced tomatoes and green peppers or something similar.
