The best part about this recipe is that it cooks up in the slow cooker and that means you can spend about 10 minutes prepping and head on out and run your errands or go shopping with friends. Come home and enjoy a home cooked meal with your family. I think this would be one of the top reasons I like the fall and cold weather I can use my slow cooker more often. Slow Cooker Chicken and Dumplings is a must try and one of our favorites, it is warm and hearty and if there is any left overs it is great for lunch the next day.
Add onion and garlic to you slow cooker and top with chicken breasts.
Spread over chicken breasts the can of cream of celery and cream of chicken, poultry seasoning, salt, and pepper.
Pour over the top your 3 cups of stock and close the lid and cook for the next 3 hours on high.
Prepare you Dumpling dough in the mean time. In a bowl combine 1/2 cup of flour, baking powder season with salt and pepper add in the first 4 tbsp of yogurt and begin mixing it all together till you begin to form a crumbly mix. Add a tbsp at a time till it forms a ball. It always depends on the flour how much yogurt you end up using. I used 6 tbsp. With floured hands form a ball and knead gently till everything is combined, important to keep hands well floured.
Once the ball is formed and smooth wrap it in cling wrap and place in the fridge to rest.
Approximately 1 hour before serving, roll out dough thin and flat. Cut into strips and then into bite size pieces. Add your vegetables and dough to the slow cooker and stir gently. Place the lid back on and let finish cooking. NOTE- this is also a good time to taste the broth and see if you need to adjust salt and pepper =)
Remove chicken breasts and slightly shred. Add back into slow cooker and stir. Let cook an additional 10 minutes and serve and enjoy.
