The name really says its all, It’s creamy and cheesy filled with chicken and bacon and saute tender vegetables. Every mouthful is just plain delicious and as inviting as the first. If you have never experimented with Spaghetti Squash, make this your first. Its super easy, healthy and the whole family will enjoy.
Pre-heat oven to 400 degrees F.
For much easier cutting, stick your squash in the microwave for 5 minutes to soften it up some. Slice your spaghetti squash in half lengthwise and scoop out the seeds. careful it is hot when it comes out of microwave use a cloth as you cut.
Place on a foil lined baking tray and give a quick spray with cooking spray and season with some salt and lay them facing down and pop into the oven for 30 minutes. Cooking time will vary a bit depending on the size of your squash. Once squash is done roasting, allow to cool until easily handled or pop on an oven mit and use a fork to separate and fluff the strands of spaghetti squash.
The squash can be roasted and stored in the fridge for a few days if you'd like to meal prep and plan ahead for a speedier dinner. I like to do this for quick weekly meals or lunches when time is tight.
If you haven't pre made your squash don't fret its okay.
While the squash roasts, start on the rest of the meal.
Dice up your bell pepper , onion, mushroom,olives and spinach and set aside. Dice up your Canadian bacon and chicken and set aside. We want all of these to be small bite sizes.
In a bullet or blender , blend together your almond milk and cream cheese and set aside and have ready.
In a non stick skillet spray well with cooking oil and saute your peppers and mushrooms for about 3 minutes, season with some salt, then add in your bacon, chicken and green peppers with the garlic herb seasoning and stir through.
Add in your spinach and spaghetti squash strand mix through and cook till the spinach is wilted then add your cream cheese mix and stir through till well blended. Season with salt and pepper if needed please taste first before adding.
Scoop the filling evenly into each squash shell then top with 1/4 cup of shredded cheese and place in the oven and broil till the cheese is hot and melted and the tops are slightly golden. Enjoy
