Firstly let me address the chicken stock, this is optional for people who would like the stew thicker or thinner, if you prefer it thicker do not add if you prefer thinner please add the choice is yours add half or even add more the points will stay the same up to 2 cups.
Place all the chopped vegetables, cilantro, beans and corn into the slow cooker then sprinkle the taco seasoning all over the chopped vegetables add in the salsa, garlic and the tomato sauce and mix everything till well blended.
Place you chicken inside and mix it in so it gets all the seasoning mix through it and place the lid on and cook on high for 4 to 6 hours.
Last half hour of your cooking remove chicken and shred and place back in and continue to cook. This is a good time to adjust the salt in your cooking add if needed or adjust the heat or liquid if required.
Serve with your favorite sides, rice- potato - pasta- zoodles- polenta- salad or tortillas.
